Roasted Chestnuts & Pioppinos in Red

Ingredients

  • 2lbs Chestnut mushrooms

  • 2 teaspoons of tomato paste

  • 1/4 cup of olive oil

  • 6 cloves of garlic

  • 2 jallepenos sliced vertically

  • 1 onion quartered

  • Red pepper flakes

  • Salt

  • Pepper


Preparation

Step 1


Prep the ingredients (quarter the onions, slice the jalapeños, deskin the garlic)



Step 2


Toss it all with the olive oil and tomato paste, salt, pepper and red chile flakes in a bowl



Step 3


Put the ingredients into a baking dish that has an oven-safe lid, cover it with parchment paper and the lid



Step 4


Roast it in the oven at 400F for 45minutes
